Submitting Assignments
Please note that you must complete all assignments leading up to
examinations and the final. If a student completes an examination or
final before completing the required preceding coursework, the instructor will
assign a failing grade for any missing assignments.
Also, the general rule is to submit up to two lessons per week and allow a
one-week turn-around time for your instructor to grade your work. If you would like to submit assignments at a
slightly accelerated pace, you must first receive permission from the
instructor.

Faculty Feature
Kristina
von Castel-Roberts instructor of HUN 2201, has a Ph.D. in Human Nutrition, and is currently studying to
become a Registered Dietitian (RD). She
has been at the University of Florida since 1994 when she began her undergraduate
program in animal biology. She is
currently employed in the College of Public Health and Health Professions.
While Dr. Castel-Roberts' primary research topic
focused on vitamin B12, she is now researching obesity in a behavior
modification and nutrition education program that relies on education,
guidance, and perseverance to make life changes. Her philosophy is that a diet is not a short
term fix but rather a way of eating. She
enjoys teaching that if your diet has contributed to poor health, you must
change your way of eating to promote health for a lifetime.
Dr. Castel-Roberts also loves horses and being outdoors, and promotes exercise along
with good nutrition. While she is
originally from Pennsylvania, Dr. Castel-Roberts has been a Gator since 1994
and considers herself a Floridian at heart. GO GATORS! |
Stories From You - Our Students
Dear Flexible Learning,
I just completed the Legal Assistant Professional certificate course. I had
looked for some time to find a good, comprehensive, correspondence course for this field, and I found it. I
recommend this course to my peers.
Excellent...this is just the foundational legal introduction for which I
was looking.

Dear Flexible Learning Staff,
I would like to thank you all for all of
your help during this special time of mine.
I have verified things with my advisor and I will be graduating this
Summer. So again, thank you for everything.

Hello
Marjorie, Thank you so much for helping me
again and again. I finally completed the course and got an "A"! This was literally my last UF course for my
degree and you have no idea how much gratitude I have for you. It's been hard because I moved back to my
hometown and started a new degree in a new university. What a big difference! So, it was difficult
to go back and forth, but finally I really needed this for myself.
Thank you again for all your help! To be
honest, my UF experience wasn't always great, but you are one of the few people
that I can honestly say really helped me. Thank you and I don't think I can
thank you enough.
